THE STORY BEHIND THE COCKTAIL NAME

Sustainability to me isn't about changing everything about our lives but becoming smarter about how we use the things we've already got. Using every part of fruit and vegetables in new and interesting ways. Developing new preservation techniques to reduce waste. Making things by hand where possible and supporting smaller creators in the process.

For this drink; banana, lemon and yogurt used in their entire capacity.

Banana juice, clarified using lemon juice and yogurt to preserve the ingredient. The whey off the yogurt, considered a waste bi-product, used to lengthen the drink and add texture. The discarded banana peel and lemon husks used to create an oleo sacrum. Any remaining lemon burnt and blended to create a waste free garnish on the drink. Served in a vessel made by hand from foraged clay.
