THE STORY BEHIND THE COCKTAIL NAME
We all know that Kombucha has gained a lot of popularity recently, with all the health benefits and what not. Fermentation as been around for a very long time and that's the foundation of most alcoholic beverages found nowadays. Working in bars, same as the kitchen, freshness is key, therefore waste occurs too often ... Using our house made honey ginger syrup that's super tasty but not the best shelf life and mainly using it in the now classic penicillin cocktail, to reduce waste. We turned it into a Kombucha , Using a blend of smoky tea , honey ginger syrup and yeast.. The result is a sweet, sour, smoky and fizzy beverage , all I added is a tasty whisky a touch of passion fruit et voila.
