30ml Homemade lemon pepper syrup

30ml Egg white

4 drops Grapefruit Bitters

THE STORY BEHIND THE COCKTAIL NAME

This cocktail was one of my first creations when I started working at Cork. I moved to New Zealand around 4 months ago, and I wanted to use ingredients that showed my French heritage. I named it after Gambetta Plaza, where I lived during my 6 years of studies in political science. Gambetta was a key figure in French politics during the 19th century, with his name appearing all over France, his own moment in time. This cocktail is my moment in time, a way to link my French life to my bar tending life in New Zealand.
