45ml Connemara Irish Whiskey

10ml Rosemary infused honey

20ml Fresh lemon juice

60ml Champagne

METHOD

Shake and strain into chilled flute. Top up with Champagne.

THE STORY BEHIND THE COCKTAIL NAME

Áine is the Irish Goddess of Love and Fertility, this cocktail is inspired by the moment you see your love for the first time. It is a magical moment and the way it is describe in "Raglan Road" (song) has always stuck with me. At this moment most people are the perfect balance of smooth and nerves, which is why this smooth peated Irish whiskey and champagne were an obvious choice. The sweetness of the honey is balanced with the tartness of the lemon and the tea like quality of the rosemary otherwise know as the herb of love.
