30ml Pineapple juice

30ml Pineapple tepache

5ml Homemade pimento dram

15ml Lime juice

THE STORY BEHIND THE COCKTAIL NAME

I chose to use Knob Creek, with complex notes of vanilla and cinnamon, to match perfectly with my 2nd ingredient, the pineapple. The humble pineapple is a huge part of hospitality and bartending. To be able to use every aspect of the fruit and reuse again is more than a pleasure.

I made my own pineapple tepache with the waste from the juice and the rind, plus the waste spices from the pimento dram I also made for this cocktail.
