30ml white wine reduction (boytritis viognier)

THE STORY BEHIND THE COCKTAIL NAME

With people becoming increasingly aware of their environmental footprint, bartenders are too beginning to upcycle the waste of their creations and incorporate these by-products in new ways. In turn, these innovative practises are creating new but familiar drinks and guest experiences iterating the work of previous generations.

After many years of blending their whisky, Ardmore created a unique highland whisky; showcasing the hard work of those whom had come before, Ardmore Legacy is their own expression of single malt.

As an ode to Ardmore and bartenders who have worked at their craft and handed down knowledge from generation to generation – Ginealach (generation in Scotch Gaelic) is my homage to what has come before, and what is to come.

My event/ promotion around the Ginealach is based around a dual serve of the cocktail in both the restaurant and the bar. In both the bar and the restaurant the cocktail will be available for World Bartender Day (week). In the restaurant the cocktail will be served in a desert style with a "petit four" as the garnish.
