Dehydrated lemon and pear

INGREDIENTS

60ml Connemara

20ml Fresh lemon juice

5ml Manzanilla Sherry

20ml Pear shrub. Method: place 5 diced australian pears, 1 cup of brown sugar, 3 cinnamon quills, 8 toasted cardAmom pods In a jar for 24hours. Place 1 cup of apple cider vInegar into jar and leave for a further 24 hours. Push down on pears to extract juices, strain into a fresh jar with a sieve.

METHOD

Place ingredients into shaker tins, dry shake for 10 seconds, fill with iCe shake Until ins are frosted, double strain into a couoe, garnish with dehydrated pear and lemon.

THE STORY BEHIND THE COCKTAIL NAME

When I was a kid I used to go over to my best mate’s house and play all sorts of silly games in his garden, especially pretending to be mythical knights, just dumb kid stuff. The best thing about his garden was that he had different fruit trees, one being a pear tree and the other a nectarine. When the pears were in season they were so juicy and delicious, but the best thing about them was when my mate's mum made her pear tart, It was delightful. It had fresh pears, cinnamon and just a whole lot of a mothers love and care.

With this cocktail I really wanted to capture the nostalgia of those days, that amazing tart and the innocence and playfulness I had as a child.
Thus The Old Familiar was born.
