THE STORY BEHIND THE COCKTAIL NAME
This cocktail was inspired by my desire to minimalise waste around the venue. Predominantly, I’ve taken lots of waste aspects from our kitchen and given what I could a second life. The rim garnish is made from the daily leftover bread, eggshell from the cocktail and plenty other bits from the kitchen. The falernum is made from the spent lime husks post juicing. The preserved lemon solution was entirely waste byproduct leftover. Everything has a new life and is completely sustainable!
Everything I had in mind was a perfect basis for a bourbon flip! to me; a forgotten cocktail in need of some love. Nutty, savoury, spicy, creamy and delicious! Maximum taste with minimal waste around the bar and kitchen? Flipping Nuts!!
