30ml homemade peanuts and galangal orgeat

30ml lemon juice

4 dashes of homemade ginger and lemongrass bitters

A pinch of sea salt

THE STORY BEHIND THE COCKTAIL NAME

I attended the last Perfect Blend in 2018. It was inspiring. My name is Paula, I'm from Chile and my passion for the last 12 years has been cooking and feeding people. Feeder by nature. 4 months ago, I had the opportunity to get involved behind the bar and this has been my new passion. When I decided to enter into The Perfect Blend, I knew the journey straight away, the sustainable one, minimal waste, maximum taste, but I didn't know what to do or which spirit to work with. A few days ago, I was making some chicken satay marinate and the satay sauce, when I realised that I was putting in the bin all these great off cuts of my favourite oriental elements. I started playing with them and I could make a leather with the off cuts. I made a straw with lemon grass and immediately knew which spirit would blend perfectly with my ingredients.
