45ml Sipsmith London Dry Gin
15ml Balinese 8 spice vermouth
80ml Fermented toasted rice and coconut soda
3 drops Citric acid solution
2 dashes Saline solution
THE STORY BEHIND THE COCKTAIL NAME
The Akasa Highball is a toast to family. This drink is inspired by a recent family holiday to Bali for my grandmothers 80th birthday. My family has always been close and growing up we all used to holiday together at least once or twice a year. As we all got older the holidays have slowed down but we all decided to book a villa in Bali for a week with and open invitation to stay as long as we could to celebrate with everyone. My grandmother loves gin, so the rule was everyone had to bring a bottle of our choice. Sipsmith was my choice and went down a hit with everyone. Whenever I think of Sipsmith I'm instantly transported back to the villa and sipping gin highballs by the pool in the sun.
