What is Trash Tiki?
Trash Tiki is a globally touring anti-waste punk pop-up that is the brainchild of bartenders Kelsey Ramage and Iain Griffiths.
The produce in all their drinks are made from would-be waste ingredients, stuff from kitchens, bars, coffee shops, and commercial business that all contribute to the global food waste issue. They’re aiming to inject some fun back around the topic of “sustainability”, with an inherently punk attitude, a playlist best turned up to 11 and an open-source website with all their recipes so everyone can be involved. What is the Power of Locality?
Since its inception the focus has always been to reduce waste by making use of ingredients already available, and a major part of that is by looking outside your front door. The Power of Locality tour will see the two creating drinks from the array of ingredients available locally, in their usual tiki-punk style as well as working with some of the best chefs around Australia.
What should you expect from a Trash Tiki Dinner?
Trash Tiki is all about making those everyday ‘would-be’ waste items into something delicious that we and the planet can all enjoy, and sharing a little knowledge along the way.
At the dinners, you’ll be able to experience Trash Tiki’s minimal waste practices first hand. They will be hosted by Iain and Kelsey who have partnered with Jim Beam and Maker’s Mark to create four cocktails unique to this tour, and will be working with some of the best chefs in Australia to pair these drinks with dishes. Each dinner will experience a ‘wild card’ drink which is exclusive to that venue, and will be created using a combination of fresh local ingredients and waste items left over from the dinner.
